Squatch Bars

It's a new year. Here is a healthy snack for going out to look for sasquatch or just taking to the office.


Squatch Bars

1 cup Almond Butter

⅔ cup Honey

1 tsp Vanilla Extract

2-½ cups Rolled Oats

¼ cup Pepitas or Sunflower Seeds

¼ cup Dried Cranberries

½ tsp Salt

½ cup Mini Chocolate Chips


  1. Line an 8×8-inch pan with parchment paper. Set aside.

  2. In a large mixing bowl, heat the almond butter, honey, and vanilla extract on half power in the microwave until it’s easy to stir. Mix until well combined and smooth.

  3. Add the oats, seeds, dried cranberries, and salt. Stir to combine, then incorporate the chocolate chips.

  4. Press the mixture into the prepared pan, and chill in the refrigerator for at least 1 hour.

  5. After an hour, cut into slices, and eat or store for later.


NOTE: You can make these and freeze them for later, BUT it's suggested that you cut them into bars before freezing. If you're going to eat your batch of Squatch Bars promptly, you can store in an airtight container with parchment paper between each bar.
